  • Kokina is an old Istanbul tradition to celebrate the arrival of Christmas and the winter. To make kokina, you put together two plants that grow in the wild in Istanbul: Knee Holly and Anatolian Sarsaparilla. The making and selling of kokina is a tradition passed down from the Rum (Roman from the East Roman Empire, in other words, the Byzantium) who are the Turkish Greeks who made up a large number of the inhabitants of Constantinople, later Istanbul. It is said that the name kokina comes from kokkino, the Greek word for red.
